Introducing “Marguita” at Baur au Lac
The secret’s out! The new signature restaurant at Baur au Lac is called “Marguita,” named after the owner’s daughter. The old Pavillon is no more.
More than just a name: In the Kracht family, who have run the luxurious Baur au Lac for seven generations, the names Andrea and Marguita are significant. Now, the best restaurant in the hotel carries one of these names too. “Marguita” perfectly suits the new concept: top-notch Mediterranean cuisine served in a magical garden, or indoors in the former Pavillon when the weather turns. Marguita Kracht, the young and well-educated daughter, is taking on more strategic roles and has a hand in the new culinary direction.
The “Trio Infernale” stays: Zurich’s foodies and loyal guests were saddened when the Pavillon closed its doors. However, the “Trio Infernale” – Chef Maximilian Müller, host Aurélien Blanc, and sommelier Marc Almert – remains at the helm of this more relaxed dining venture. Müller has been hard at work on the new menu, already testing out dishes.
Riviera by the Limmat: What’s on the menu at “Marguita”? General Manager Christian von Rechenberg says, “Riviera cuisine! The best Mediterranean dishes.” Chef Müller is excited about the task, highlighting the signature dish: salt-crusted sea bass with tomato vinaigrette and a luxurious caviar beurre blanc. He’s also bringing in some creative twists like “King Crab Rossini” after a fishing trip in Norway.
Stars and points: Is a fine dining chef excited about a more laid-back concept? Max Müller certainly is, fully committed to the project and its long-term success. While the focus shifts to serving up to 120 guests daily, accolades from GaultMillau or Michelin are still welcome. With a strong team, including talented sous-chef Jendrik Wollesen, Müller remains unfazed about the guides: “Even Heinz Beck got three stars with his tortellini in Rome.”
Investments for everyone: Baur au Lac is undergoing major renovations, with millions invested in “Marguita,” a brand-new kitchen, and facilities for staff. The aim is to make sure everyone feels at home in the revamped hotel. There’s no lake view, but a huge video wall streams live footage from the lake outside.
